Just another recipe that my kids love!
For the chicken:
1 kg. Chicken Breast Fillet (Cut into bite size pieces like chicken nuggets. You may choose other parts of the chicken if you wish to)
Half-bar Buttermilk (melted)
1 whole Garlic (chopped)
6 pcs Calamansi Extract
Salt & Pepper to taste
Chopped Kuchay or Parsley for garnishing
Vegetable Oil for deep frying
Breading:
1 piece Egg (beaten)
All Purpose Flour
1. Marinate the chicken using all the ingredients above. Set aside for at least 2 hours. Toss once in a while and do not keep in the fridge. (With my first attempt of making this, I kept it in the fridge while marinating completely forgetting that the butter gets solid in cold temperature. )
2. When ready, dip the chicken pieces into the beaten egg, and roll it on the flour. Some actually put and mix the breading ingredients directly into the chicken pieces to give the chicken an even coating but I prefer it the other way:dip, roll and deep fry until golden brown.
3. Garnish with chopped kuchay (optional).
For the gravy (original recipe from Panlasang Pinoy):
3 tablespoons buttermilk
5 tablespoons all-purpose flour
2 pieces chicken cubes
2 1/4 cups water
Salt & Pepper to taste
1. Dilute the chicken cubes in water.
2. Heat a saucepan and put in the butter on low fire.
3. Add 2 tablespoons of all-purpose flour first and cook low fire while continuously stirring until the color turns to medium brown. Do not overcook.
4. Add the remaining flour and continue stirring.
5. Gradually add the diluted chicken cubes or the chicken broth while stirring. Continuous stirring is needed to prevent lumps.
6. Bring the mixture to boil still on low fire for at least 5 more minutes while stirring until the mixtures thickens.
7. Serve hot with your buttered chicken. However, my eldest prefers it eaten with sweet chili sauce.
