Ingredients:
1/2 kg. Meat (your choice : Pork, Lamb, Chicken or Beef)
3 tbsp. Cooking Oil
1/4 cup of Grated Coconut
2 tsp. Masala Powder
2 big pcs. of Red Dried Chilis
1 tsp. Ginger-Garlic-Chili Paste (pwede ding fresh pero dapat chopped: 4 cloves of garlic, 4 strips of gingers, 2 pcs. green chilis)
2 pcs. Red Onion
4 pcs. Tomato (katamtamang laki din)
4 pcs. Cloves
1/2″ Cinnamon Bark / Stick
A Pinch of Cumin Seeds
5 pcs. Pepper Corn
Fresh Coriander Leaves
Fresh Curry Leaves
1 cube Maggi or Knorr (depende anong meat mo)
2 pcs. Potatoes (optional)
Directions:
1. Slightly burn mo sa apoy yung 2 pcs. Red Dried Chilis para lumutong, wag mo susunugin ha? Basta masayaran ng apoy.
2. In a small pan, ilagay mo yung grated coconut, tapos pag medyo nainitan na, ilagay mo yung Masala Powder. Lutuin mo hanggang maghalo na sila.
3. Tapos i-blend mo yung 1 & 2 kasama ng Cloves, Cumin Seeds, Cinnamon Bark and Pepper Corn.
4. Kung meron kang pressure cooker yun ang gamitin mo para mas madali lumambot esp. pag lamb/beef ang lulutuin mo. Sa cooker, ilagay mo na yung Oil. Then Onions, pag brown na, lagay mo na yung na-blend mo kanina. Saute mo lang for like 3 minutes.
5. Then Ginger-Garlic-Chili Paste. Gisahin mong maigi para malasa. Isunod mo ang fresh curry leaves.
6. Lagay mo na yung tomatoes, dapat matunaw yung tomatoes para maging sauce. Slow fire lang.
7. Lagay mo na yung meat. Isunod mo yung potatoes kung gusto mong lagyan.
8. Ilagay mo na yung Maggi Cube.
9. Let it boil on a slow fire, mas matagal, mas tender ang meat at kusang magkakaron ng sauce. Lagay mo na din yung fresh coriander leaves. Kung gusto mong mas malasa at may aroma ng authentic curry, lagyan mo ulit ng fresh curry leaves sa ibabaw, takpan. (Pag pressure cooker gamit mo, takpan mo na then mga 4-5 whistles lang, luto na yun. But if not, wait till the meat is tender. Pag ganito you might need more water)
