
Ingredients:
4 tbsp peppercorns (green if possible)
4 sirloin steaks, trimmed
4 oz butter
2 tbsp brandy
How to cook:
(1) Press the peppercorns into both sides of the steaks. Place on a plate, cover and leave to stand for an hour.
(2) Heat a large heavy based frying pan, add the butter. As soon as it has melted add the steaks. Cook for 2-4 minutes or according to your liking.
(3) Remove the steaks with a spatula and keep warm.
(4) Add the brandy to the pan and stir well to mix. Spoon the sauce over the steaks and serve immediately.
